A Simple Holiday Treat

I love the combination of Caramel and Chocolate. During the holidays in the past I would try to think of a way to make Turtles for a Holiday treat. I was always stuck at the caramel. If you know my style I like simple. Last week I was at Target and came across this Lovely Caramels and knew they were my missing piece.   



You will only need 3 ingredients:
 
1 bag Lovely Caramels
1 small bag of Whole Pecans
1 cup Dark Choc. Chips 



 
Pre-heat Oven to 375
Place wax paper on cookie sheet.  Then Place 3 Pecans in next to each other.
Cut all Caramels in Half (I found they were plenty big) & place on top of pecans.
Place in oven for 7-10 minutes. Watch close because caramel will burn easy. You want to take out of the oven just as they are melted.
While in the oven place Dark Choc. in glass bowl and melt in microwave. Stir half way.
When you take pecans and caramel out of oven use a spoon to top chocolate on caramel right away.
Let sit to set or place in fridge to set faster.
 
Store In Fridge.



I am so glad I came across these caramels! I know they will be a hit this Christmas.

Italian Turkey meatloaf

 
Life Style Coach Becky is sharing one of her family favorites! Feeding 6 mouths tends to be a lot of cooking! It is a priority to feed her little ones good nutrition yet keeping it simple is very important to this mom.
 
One day Becky was browsing through some recipes trying to add new ones to her menu plan.  Having options that are simple and the whole family will enjoy is very important. She came across one for Parmesan turkey meatballs, and was intrigued because her family loves anything Italian.  However, making meatballs is a tedious job, especially when you are feeding 6 mouths!  Changing the concept to a meatloaf saved her time.  Next, she looked at ingredients and it passed the simple test, however it was a little too simple.  She decided to add a cup of cottage cheese because they like the creaminess it brings and you can't have Italian without cheese!  Plus, with kiddos hiding veggies is always a bonus!  It was a big hit! 

 

Italian Turkey Meatloaf

2 lbs ground turkey
1 onion chopped
2 cups chopped spinach (or more if you like)
2 eggs
1cup cottage cheese
1tsp sea salt
1/2 tsp pepper
1/2 tsp garlic powder
1 Tbls Italian seasoning
1 1/2 cups spaghetti sauce
1/2 cup Parmesan cheese
Preheat oven at 375. Sautée onions until translucent, mix all ingredients together except spaghetti sauce and Parmesan. Put meat mixture in a 9x13 pan, top with spaghetti sauce then sprinkle on Parmesan.

Love fall time baking!

 


This time of the year we hear a lot about recipes with pumpkin, I love them however my kids are not big fans. After a summer of not baking much it is great to be back in the kitchen doing just that. My Daughter and I created  Carrot Apple Muffins today, we loved the sweetness form the apples and how the carrots made the muffins so moist!

 Carrot Apple Muffins

Ingredients
1 1/4 c. whole wheat flour
1/3 c. honey
1 teaspoon cinnamon
1/2 teaspoon baking powder
dash of sea salt
1/2 c. unsweetened applesauce
1/2 c. grated carrots
2 eggs, beaten
1/4 c. vanilla almond milk
2 small apples chopped into small pieces

Directions:
Preheat oven to 350. Place liners in 12 muffin cup pan. In a large bowl whisk together flour, cinnamon, baking power, sea salt, In a separate bowl combine carrots, applesauce, honey, eggs, almond milk and chopped apples. Add half the carrot mixture to the flour mixture, stir until blended and then add the rest of the carrot mixture. Spoon the batter in to muffin liners. Bake about 20min. Enjoy~

My favorite. . . . .

Eating Clean does not have to be complicated. I get asked often about my favorite go to dinners. Everyone is busy doing whatever they have gong on in life, and for most taking time to making a healthy meal is not top on the list. But with such a busy life could you imagine feeding your body the right nutrition that give you the energy you need to get thru the day! Make it a priority to feed yourself good for you foods your body will thank you.

Steak Salad is 1 of my favorites! Fast, Easy! Filling!

 
Cut Flank Steak into Bite Size Pieces.
 
I cook my right on the stove top in a pan and Season with and organic steak seasoning!
 
I plate up either Spinach or Kale
top with Tomatoes, Peppers
& Fresh Blue Cheese Crumbles
 
DONE!! Easy as that.  You can pick your favorite greens and veggies. That is what makes this meal so easy it can be what you have on hand.

Kids School Lunch all packed up!

More and more parents are making their kids school lunch. All for different reasons! I pack mine so I know they are getting great nutrition to keep full and ready for a good day!
 
However being creative and thinking outside the sandwich takes some practice. I want to share a few ideas and tips with you.
 
Make sure you have:
1. Lunch Cooler (write your child's name on it)
2. Ice Pack
3. Simple container to hold their lunch
4. Water bottle
 
You can choose what works best with your schedule to prep in the evening or in the morning. Have items ready and prepped as much as possible so you do not have to spend a lot of time packing their lunch. You can even get your kids involved.
 
Make sure you have a variety of food groups, protein, carbs, fruit, veggie and good fats!
 
Fun tips:
1. Cut into bite size pieces. (remember kids do not have a lot of time and they are busy talking with friends)
2. Make it fun and colorful.
3. Do not forget a napkin and if they need any plastic ware.

Greek Yogurt, half of banana and a peanut butter balls.
** If you school is peanut free you can use a seed butter.


 
Here is a new lunch I have started this year.
Organic grass fed beef sticks with a cheese stick.
Homemade Banana Muffin, Pea Pods and berries!
 
 
Pictured above is a Silicone Ice Pop holder, I mixed Greek Yogurt, berries & Honey to this one!
There is also Applegate Pepperoni with Laughing Cow Cheese in the middle, a grass fed beef stick, grapes and a applesauce cup!  ** This is a peanut free lunch!
 
More Ideas:
Hard Boiled Eggs
Ants on a log (celery, peanut butter & Raisins)
Apple Slices Peanut Butter Sandwiches
Any Raw veggies
Homemade Granola Bars (any homemade goodies)
Trail Mix
Dried Fruit
Veggies Straws
 
I have a rule and allow 1 pre packaged item in the lunch. The rest is fresh or homemade.
 
Do not forget the athlete in your house! For many high school students they are gone all day with practice after school and even longer is they have a meet or a game!
 
My son is in cross country and track and some evenings he dos not get home until 9pm.
He has a full meal replacement protein bar right after school on the way to practice or a game. This gives him the nutrition he needs!
Then we pack a dinner and a few snacks, growing active teens need to eat!
 
 
Since I pack his dinner early in the morning I freeze 1 water bottle and it keeps his food cold and he can have more to drink for later.  Pictured above is his after school protein bar, Whey Thins for fun, Sandwich with Applegate sandwich meat, fruit and Want More Energy this he adds to his water that offers natural electrolytes.

I LOVE success stories!


I am always here to lead by example and inspire others to live the life that they desire. Honestly I have a happy dance for every email, text, or message from someone telling me they are ready to make a change and Jump Start their Journey! Once in awhile it will be a dear friend of my that reaches out, not only am I excited that they are trusting in me but it is because I know this lifestyle change works and they are ready!!
Meet Autumn, and read about her Journey . . . . .

 I grew up always being self conscious about my weight and the way that I looked. I was not an athlete growing up, but I always have had this passion to be one. I just simply wanted to believe in myself enough to go out and run, to to go the gym and not worry if I could accomplish a workout without looking like a failure. In September, 2010 I committed to myself that on my birthday of that year I would start taking care of my body and to release the weight that had been holding me back for so long. On October 2, 2010, with the support of my family and friends, I started with my journey...

It all went so well in the first 3 months. I had released almost 30 pounds and felt great about what I was doing. Then, I got comfortable. I stopped keeping track of what I was eating and would over indulge on the weekends because I had "been good" throughout the week. For three years I continued to slowly release weight, but I would yo-yo up and down fighting the lose the few pounds that I had lost the week before. It was a constant battle for me that I found myself feeling defeated and discouraged.

I had a friend, Nichole, that I had met a few years ago when I lived in Minnesota, prior to starting this journey. When I met her we both had pre-schoolers and husbands that would work late nights. We would spend a lot of time eating pizza together (ok, an entire LARGE pizza between the two of us). After I moved away I noticed she started changing her lifestyle. I watched her improve on so many levels and become a successful clean eating coach and personal trainer. I followed her and I would stalk her clients, yes stalk them, and watch them as they transformed their lives. I found myself wanting what she was teaching, yet I was ashamed to admit that my way of releasing weight hadn't been working for me. I finally reached out to her in March of this year. She shared with me her passions and her visions. She wants to simply help people acheive the best of who they can be. After being coached by her, releasing the weight to meet my first personal goal, I too have decided that I want to continue to improve my health and to share with others what has helped me become what I am today.  You see, she didn't teach me to only eat a certain number of calories a day and to keep track of everything I was putting in my mouth. She introduced me to Isagenix and clean eating. At first I was dead set against trying any product or supplement. I wanted to do it on my own and to just eat the proper nutrition to maintain my weight. I found myself overwhlemed with trying to eat clean all of the time. It was time consuming to prepare the foods that I knew were healthy and clean for me to consume for every single meal. This is where Isagenix has been a game changer for me and has helped me to acheive and maintain a healthier lifestyle. It has made me confident in knowing that I am consuming clean nutrition, nourishing and cleansing my body. My husband, Brad has jumped on board and has been my biggest supporter in maintaining this lifestyle, along with my boys. We have made so many improvements in our nutrition, making Isagenix and clean eating a part of our daily lives.

I am looking forward to the next part of my journey, my families future, sharing with my family and friends. I am now confident in knowing that what I have been taught and the tools that have been given to me are tools that I can't keep to myself.  I have been taught that it's consistency over perfection and that we are all in this together, so why not share what has given to me? Why wait? The time has come...

Ovid's Journey . . . . .

For majority of my life I didn't really ever take my health seriously, I was young and felt invincible. Granted I always believed in healthy healing. I had just never needed it to its full extent. I had gained weight and lost weight over the years. And after each of my 3 children the weight became harder to loose. But little did I know that weight was going to be the smallest of my worries. I decided to become a surrogate 3 years ago, and it was with twins! My pregnancy was great until my last week, I became very ill and by the time I delivered I had developed Help syndrome and was very close to death. It had also left me with a severe brain injury.
For 8 months of my life became a daily struggle. I had to learn how to live and function again. From waiting for my eyesight to return, learning how to feed myself again and every daily task most take for granted.

Then 8 months into my new very unhappy life. Came an amazing gift of health and life through nutritional healing and cleansing that has turned my world upside down.
My mental health has returned, and I've released 40 pounds in the last 2.5 years and kept it off. Just by using an amazing product line and living life to its fullest potential everyday!

I am extremely excited to say I am working to be a lifestyle coach to help you and others learn how to live a healthy happy life!  My journey or should I say my turning point was Sept. Of 2013.  I was finally done with not being happy with myself, feeling sluggish, and depressed.  I was struggling with life because of my weight.  I was at my heaviest point I had ever been.  I talked to Nichole (my coach) and reached out for help on what to do.  She had talked to me a year prior about clean eating and Isagenix.  At that time I was not ready to make a lifestyle change.   Finally the day came and I said I am doing this!  I made a 60 day goal to shed 20 lbs by my 35th birthday!  Through clean eating and Isagenix I made my goal!!

I have never felt better health wise, emotional wise or had the confidence in myself that I do now.  I finally feel good about myself again!!  I have more energy than ever before!!  I am so pleased with my transformation and have such a strong belief in Isagenix  and clean eating that I want to share and help others in much of the same way Nichole has helped me change my life!

Get to know Jenna . . . . . .

Growing up I was always active. Hockey was my favorite sport to play!  I my mid 20's I became interested in feeding your body good foods and healing thru food and natural remedies. I was very intrigued.   It was when my husband Buddy saw a photo of himself and knew he need a change.  Buddy making a change gave me all the support to continue with the path I wanted to take for my family.  1 1/2 years later we are both down pounds and even more inches and we are healthy and active as a family. With the tools I have gained and learned over the last year I am excited to share with others and helping them achieve the same success.

Kids lunches all Cleaned up!

Kids are home & they are hungry for lunch!!

I try my best to keep a eating schedule for my kids during the summer or someone is always in the kitchen. I am lucky enough to work from home so I have found that is I make them lunch there is less snacking thru the day and that their lunch is full of better options! With that I strive for fun summer lunches that will keep active kids full.



A few of my favorites:

Strawberry Peanut butter Wraps ( I think my daughter would eat these every day)


Grilled Fish and Sweet Potato Tots

  
Clean Chicken Quesadilla  (these are awesome because we typically have grilled chicken prepped)


Coconut Chicken Nuggets with a fruit and/or veggies


Salads with Hard Boiled Eggs (for some reason my kids prefer a salad if there is eggds on it)


Ham/Turkey and veggie wraps ( I try and limit the sandwich meat and when I do buy it I purchase nitrate free sandwich meat)

Homemade Organic Mac&Cheese with fruit and/or veggies


Pita Pizzas

Try to have your fruit and veggies cut and ready to add to just about any lunch. You can use cookies cutters to cut your produce in to fun shapes for smaller children. We will use the Bolthouse dressing as their veggie dip or peanut butter or yogurt to dip their fruit in.

Schools out for Summer!!

 
Summer is in full swing and for the mothers out there it means keeping the kitchen stocked full of “clean” options for our kids.


You may notice your meal prepping shifting in the summer. For some you need to be even more prepared due to summer sports and activities and for others it may be opposite! I know in my house I need more on the go options ready and available not only for me my three very hungry growing kids.


I wanted to share a few of may favorite treats to keep on hand:


Peanut Butter Protein Balls

Popcorn with coconut oil & Sea salt

Trail Mix


Protein Bars

Fruit & Peanut butter dip

Want More Energy Popsicles

Ants on a Log

Yogurt and Coconut Granola

Kale Chips

NEW!!! Graham Cracker Sandwiches – these are a fun new frozen treat I just created!
 
 
 
Recipe: Frozen Graham Cracker Sandwiches
 
Ingredients:
Annie's Organic Graham Crackers
All natural peanut butter (or any nut or seed butter)
1 can of coconut milk
1 t. vanilla
2 packets of stevia
 
First you will make your Coconut Whip Cream.
 

What You Need to make Coconut Cream!

Ingredients
One 15-ounce can full-fat coconut milk
2 packets of Stevia
1 teaspoon vanilla or more to taste (optional)


Instructions

1. Place the can of coconut milk in the refrigerator and leave it there until well-chilled. You can even leave it in the fridge overnight.
2. Open the can of coconut milk. There will be a firm, Scoop out this firm layer coconut cream.  Do not take out the bottom layer that looks like water, you do not use this layer.
3. Place this cream in the bowl of a stand mixer, or a large bowl.
4. Turn your mixer or hand beaters to high speed, and whip the coconut cream for 3 to 5 minutes.
5. Whip until it becomes fluffy and light, with soft peaks. Mix in stevia or vanilla, if using.

Once your cream is made, take out your crackers brake them in half spread your nut butter on one cracker then add your cream and top with the other cracker.
 
Place in a Container and add wax paper in between each layer so they do not stick. 
 
Once Sandwich is frozen ENJOY~

Have you ever tried Running Intervals?

Interval training is a type of discontinuous physical training that involves a series of low- to high-intensity exercise workouts interspersed with rest or relief periods. The high-intensity periods are typically at or close to anaerobic exercise, while the recovery period involve activity of lower intensity.

Interval training can be described as short periods of work followed by rest. The main aim is to improve speed and cardiovascular fitness.

Interval training can refer to organization of any cardiovascular workout (e.g., cycling, running, rowing, etc), and is prominent in training routines for many sports. It is a technique particularly employed by runners, but athletes in many disciplines use this type of training.

When I first started running I preferred my run on a treadmill however in the last year I have found a love to run outside and in new places.  The winter is long here in Minnesota and I still need to get my cardio in. I have found I can get it done faster and more enjoyable running in intervals.

You can really select what works for you. How long you want to run in your burst and then how long you want to go in your lower intensity.

For example:
On the treadmill; Plan to Run for 1 min then walk for 30 sec.
                          or Run FAST for 30 sec then pace yourself in a run for 1 min
Then select how long you will do this for maybe start with 10 minutes and work your way up to 20 minutes.

When outdoors you can select a length meaning you will run 3 blocks and walk for 2 blocks. Doing this time will fly by!

Remember your burst is when you are pushing yourself out of your comfort zone.  This is when you will hit your goals and make more changes in your body.

Intervals are also great when you do not have a lot of time.  Completing 15 minutes of running Intervals you will burn more calories rather then running study state for 30 minutes.  You will also build your strength and work your way up to a longer fast run.  

Intervals overall offer many benefits! Next time you hit the pavement or the gym make a fun plan for your intervals and CHALLENGE yourself!

Speachless!

It is a passion of mine to help others release weight, learn how to eat clean, feel their greatest, and crush their goals!

After being a yo-yo dieter for 7 years and not wanting my age to be an excuse I finally found the tools. I was introduced to the lifestyle of eating clean and learned why it is so important to supplement. When I knew I have found what I was missing and said good bye to yo-yo dieting I knew I had to start sharing these tools.

Each of my clients touch my heart in different ways. One thing many of them have in common is putting everyone and everything else before they take care of their selves.

Shawna was not any different she is the greatest friend to everyone and always there for them and their families!

When changing your life style, being ready to put yourself first to better your health is making that decision! That is the first step towards your success.

Did you know that being a in support group statics show you will release double the pounds rather than trying to do it on your own. I like to add that having supporters your Journey is more fun and enjoyable too. 

Last September Shawna made that decision she was ready to make a difference and that is EXACTLY what she did.


                                       Day 1             5 Months Later

In the beginning we spoke about her goals!  Having goals are essential you need to know what you are working towards and how you are going to get there. We started her with the best nutrition with our super food nutritional cleansing system,  shared with her the fundamentals of eating clean and she started working out!

I could not be anymore proud she took the tools and ran with it! Her transformation truly amazes me. Her journey is now been going on for 9 months and is maintaining her weight released.  If you ask me maintaining can be sometimes the hardest if you do not have the right tools once you do have those tools it just becomes your lifestyle and that is when you are living to your fullest!

Summer is near which means this is a time of the year many are brining on the goals.  My question for you is are you ready to Jump Start your Journey?

Almond Butter Pecan Bars

 
These new bars I created might just be my new favorite!!
 
 
 
 
Almond Butter Pecan Bars
 
 
1 can drained Garbanzo Beans
 
1/2 cup Almond Butter
 
1/4 Maple Syrup (you can use honey if you prefer)
 
2 teaspoon Vanilla
 
1/4 teaspoon Baking Powder
 
1/4 teaspoon Baking Soda
 
1/4 cup Pecans
 
1/3 Dark Chocolate Chips and another 1/3 Pecans (this will be for the top)
 
Pre-Heat oven to 350. Place first 6 ingredients in food processor, blend until smooth.  Spray olive oil in a 8X8 and spread mixture into pan. Sprinkle Choc. Chips and Pecans on the top of mixture.   Bake for 20-22 minutes.
 
Lets cool and enjoy!!!

Goodies Good for Everyone!


Eating Clean does not mean you cannot bake treats anymore. It just means you have to get more creative. Beans are a great source of fiber and protein, so why not hide them in cookies!

I remember the first time I made them I did not even tell my kids what were in them. Do not worry they are kid approved!






Chocolate Chip Cookies

1 can of garbanzo beans (drained)

1/2 c. oats

1/4 unsweetened applesauce

1 banana

1/4 t baking soda

1/4 baking powder

1/4 suncant

1/3 honey

1 t. vanilla

A Few shakes of Cinnamon

2 T Flax seed

1/4 dark choc. chips

1/4 all natural peanut butter (optional)

Preheat oven to 350. I like to bake mine in a mini muffin pan, spay with a non stick olive oil.

Blend everything but the choc. chips in a food processor until smooth. Then stir in chips.

Add batter to mini muffin pan. Bake for about 20-25min, until a golden light brown.

What is Amy Jo up to now?

Remember last year I shared Amy Jo's story with you. She made a goal to release 37 pounds by her 37th Birthday. Not only did she crush that goal she made a new goal to compete at Fitness Universe in Las Vegas this last November.

I know her story inspired many because she is a busy wife, mom of 2, friend and so much more! I asked Amy Jo to share an updated on her Journey!

It’s the end of January and freezing cold out, but it doesn’t stop me!!

Its been a Year and half since I started my journey to a healthy life… and wow its been a great time! Since my last blog with Jump on My Journey I had hit my goal of 37lbs for my 37th birthday, ya!!!!! At that time I set a year goal, Fitness Universe, Bikini!!!! Wow what a year!!
 
 Day 1 of Amy Jo's Journey

Setting my goal for one year seemed to be forever…..but really take a look at it. I had already 30 day, 60 day and 90 day goals, so with this I felt that I need to go big or go home!! I knew that I could lose weight and eat clean, but how about really changing my body and learning more. TIPS: still those 30 day small goals…like trying to make new food, lifting that extra 20lb, or running that next mile. Reward yourself!!!!
90 days later hitting her 1st Goal!

Healthy living is nothing but the best! I have changed my life and career in to help people change the lives. Do I always be good, no, but I don’t worry about what its going to do to my weight when I have a night out with my family or date night with the hubby.

1 Year later! 

Next goal???? Haven’t set anything in stone, MMA style, Fitness Universe in June, Tri Athlons, for sure staying healthy and help other stay healthy. Rock it with everything you got and Dream Big!!!

Making the Decision

40% of Americans make a New Years Resolutions!
Did you know that only 8% achieve their resolutions.
 Many of you have made the resolution to loose weight or to get healthy! We are well in to January and a few you may already be struggling. I want to share a few tips to help stay on track!!



1. If your goal is Weight Loss, break your goal down on how you are going to get there. For example say it is 30 pounds you want to release. Rather that focusing on 30 pounds why not start with scheduling in your workouts for the week. Make a goal that you are going to get in 3 workouts and plan them. This can be done the same for your meals, plan them and prep them. Focusing on how you will CRUSH your goal will help you get there faster.  Overall remember how long it took you to get where you are today and remind yourself that this is a Journey it will not happen over night so do not be hard on yourself!

2. Surround yourself with positive like minded people. It is our choice how we live each day. However sometimes our surroundings can be negative or full of unhealthy choices. Take a step back and look at those who are already healthy and positive or those who always support you. Make sure you keep them in your daily life. If you feel you have no one, that is okay! Try meeting others in your next class at the gym!

3. Read!!! You made the decision to get healthy and it is the perfect time to educate your mind. Reading motivational and self help books will help your mindset. When making changes to your lifestyle so much of your surroundings can mess with your goals. However when you are always reading it truly can help your mindset. Last year this was one of my new years goals to read 1 book per month on self improvement! I did not know when I made this what it would do for me to achieve the rest of goals!!!  After the reading I did the last 12 months I now believe that your mindset is key!!

Remember not to be hard on yourself. No one is asking you to be perfect, so many of us are quick to quit when we are not.  It is consistency over perfection! You can do this you have already made the decision.
